THE STORY
Kermes was conceptualized in 2013 when two good friends set out to produce a product that, at the time, they were only able to get from abroad. This being, premium Ibérico. Andreas and Alex have always had an appreciation for quality meats and especially locally grown products, but the incredible Ibérico charcuterie and fresh meat was only available to them if they imported this from Spain.

Much like wine, the terroir has an impact on the pigs. When given the chance, pigs are constantly foraging the earth in search of food, giving them rich nutrients and minerals. This supports their general health and fulfills their natural instincts.
For this reason, the location was an important factor in creating the farm. It is set on a mountainous landscape with oak, walnut & holly trees at an altitude of 700 meters. Located on Mount Lapitha
in the Western Peloponnese near Ancient Olympia, it is a protected area and wildlife refuge. The pigs are left to freely forage in this rich natural environment.
Andreas and Alex follow the nagtural farming model. The pigs are fed exclusively with natural cereals and herbs, found in Greece. Once the pigs reach maturity, they are also fed nuts to enhance the flavour of the meat.

KERMES’ desire was to not only reintroduce the ibérico breed in Greece, but also establish it as a hallmark of Greek production and livestock. Investing in exceptional quality, the farm animals of KERMES belong to a unique breed of the Iberian pig, named “Sus mediterraneus”.
It is the oldest breed of pigs that used to be found throughout the Mediterranean, but today its population has decreased and is mainly found in the Iberian Peninsula (to which it owes its name) being Spain and Portugal.
The prevailing theory is that the pigs “Sus mediterraneus” arrived from Phoenicia (now Lebanon), where they were mixed with wild boars and later evolved. This is where their black color emerges from.
The rebirth of this breed signals the return to a healthy cycle of breeding and consumption, a cycle that conveys the kindness and freedom we provided to these animals. Creating a more honest relationship between man and nature.

KERMES ibérico pigs roam freely in a protected area on Mount Lapitha, in the Western Peloponnese, and are raised with natural farming methods. The result is a superior tasting product.
